Buttercream is the heart and soul of many beautiful cakes. It’s rich, creamy, and when done right, it’s a dream to decorate with. However, air bubbles can sneak in during mixing, leaving unsightly bumps that disrupt your cake's perfect finish.


Let’s look at why air bubbles appear

UNDERMIXING: Incorporating too much air by beating the buttercream for too short a time.

TEMPERATURE: Using ingredients that aren’t at the proper temperature can cause the butter to firm up, trapping air in it.

MIXING TECHNIQUE: Not scraping the bowl or not folding in ingredients properly can leave pockets of air behind.


4 Top Expert Tips for a Smooth Buttercream Finish

1. Mind Your Mixing

MIX ON LOW: Use a low-speed on your mixer once your butter is softened and by this I mean soft enough to spread but not too soft that its runny. This will help minimise the amount of air that gets whipped in. Although it will have lots of air bubbles to begin with. Just be patient and beat for at least 5 minutes.

SCRAPE THE BOWL: Frequently scrape down the sides and bottom of your bowl to ensure even mixing and to release any trapped air.


2. Temperature is Key

ROOM TEMPERATURE INGREDIENTS: Always ensure that your butter, eggs, and milk are at room temperature. This helps achieve a uniform, creamy texture.

WARM IT UP: If you trying to use buttercream that you have prepared in advance and it has stiffened, let it sit at room temperature for about 20 minutes. No time to wait? Gently warm it using a microwave, in short 10 second bursts, to restore its smoothness.


3. Mastering the Finishing Touch

CRUMB COAT & CHILL: Applying a thin crumb coat to your cake first, then chilling the cake for about an hour will help seal in the cake and avoid getting crumbs in your buttercream finish.

USE A HOT METAL SCRAPER: Once you have spread the buttercream around the cake, use a hot metal scraper to help smooth the buttercream around the cake. Place the scraper in hot water, wipe it dry (this is very important), and then smooth out your buttercream. Be careful though when using the hot water! The warmth of the scraper will help melt away any imperfections for a sleek finish.


4. Practice Patience & Precision

SLOW & STEADY: When applying your final coat of buttercream, work slowly and steadily. A gentle hand is key to maintaining a smooth, even surface. You might also need to go over it a few times to get all the imperfections out.

LIGHT PRESSURE: Use light, even pressure to smooth out the buttercream without pushing the air bubbles further into the mix.
